Artichoke Fusilli With Parmesan Sauce

  • About 2.5 cups of whole wheat organic fusilli 
  • 1.5 cloves of fresh garlic (chopped)
  • .5 teaspoon salt
  • pepper for taste
  • 1.5 teaspoon Fresh parsley chopped
  • 1 cup of artichoke hearts (canned)
  • 3/4 cup of heavy cream
  • 1/3 cup of parmesan cheese (grated)
  • 1-2 tablespoons of earth balance vegan butter

1) Bring pasta to a boil, (about 13 minutes) season water with a pinch of sea salt and a drop of olive oil

2) In a large sauce pan, melt butter and add garlic

3) After garlic and butter has begun to cook add salt, pepper, cream, and artichokes. Let cook until heated all the way through (about 3-4 minutes)

4) Strain the pasta and add the sauce. one you have mixed this through add parmesan and parsley.

5) put it on your plate and enjoy!
